More than just chicken and ribs!
BBQ is our passion, no doubt about that. There's nothing we love more than slow cooking meats like Brisket, Boston Butt, Ribs and Chicken. However that is far from all we do. A lot of the time a corporate event calls for a more upscale menu and this blog is to let you know we are more than capable to meet those needs. I'd like to share with you a few cooks we have done in the last couple of months that feature food you might not expect a GrillBillie to turn out.
Holiday Ham
New Years are for new things Right? Well this year the GrillBillies are proud to add Smoked Ham to their menu. Jan 1st 2009 we smoked our first ham. Proud to say it turned out wonderful!
The 22lb ham was rubbed down with our "Butt Powder" and slow smoked for 6 hours using nothing but Hickory wood. The last hour of the cook the ham was coated with a sweet Brown Sugar based glaze.
Pricing is yet to be determined, but these will definitely be on the menu in the near future, great for holiday parties, or just when you're craving a very special ham sandwich.

Alabama Grill Billies - Catering Menu
Pulled BBQ Pork $9.00 / LB
This BBQ staple, Boston Butt, is injected, rubbed, and slow smoked for 10-12 hours and then pulled/shredded. The pulled/shredded meat is then lightly dusted with our signature 'butt powder' and vacuum sealed for freshness.

Great Weekend Cook
This weekend Matt and I took a couple three orders for about 75 Pounds of Pork and a Brisket.
Everything ran quite smooth and we smoked for about 14 hours total and were able to wrap up the orders in a couple of hours.
